Bruschetta is a well known, simple Italian appetizer with several variants. My favourite is the basic bread, basil, tomato and feta cheese, as other ingredients like garlic and onion tend to overpower the more subtle flavours that make bruschetta so delicious.
But there’s no need to have cooked bread, with its yeast, gluten or carbs. Much healthier is to have a raw eggplant base. You’ll need a food dehydrator, but it’s simple, and maintains its enzymes as there is no cooking involved, which means your body will be healthy and happy.
Finding ways to create the dishes you know and love using raw substitutes can be exciting and fun. Though this recipe uses dehydrated eggplant, a bread base can be replaced with raw breads made with pumpkin, nuts, or anything you wish to experiment with and imagine. As for the cheese, it’s possible to substitute feta with a raw cheese made with cashew nuts, but this recipe is much more delicious with a simple light spread of white miso paste.
So here is my delicious recipe:
5 leaves of Basil
1 Tbs White Miso
1 Tbs Apple vinegar
Slice Eggplant and Tomato, and then dehydrate them at 105AÃ¯Â¿Â½F for 10 hours.
Blend White Miso and Apple vinegar until smooth.
Spread the Miso-Vinegar mix on the Eggplant.
Make layers with the Eggplant, Tomato, Cucumber and Basil.
